Every bowl of SHIN Matcha begins far before it reaches your hands. It starts in the quiet hills of Shizuoka, Japan’s most celebrated tea region, where generations of farmers devote their lives to cultivating exceptional tea. These fields, cared for with patience and tradition, are the birthplace of our matcha.
Our journey begins with shade-growing, a technique that gently shields young tea leaves from sunlight. This slow process deepens their colour, sweetness, and umami. During Spring, the young leaves of the first harvest is selected SHIN’s matcha.
After harvesting, the leaves are dried and ground with care. Using traditional granite stone mills, our growers grind the leaves slowly to protect flavour, aroma, and nutrients. This millstone process is time-honoured and produces the fine, silky powder that defines true Japanese matcha.
